Can we just lament on how delicious birria meat is? It’s tender, moist, juicy, and literally MELTS in your mouth. The spice is mild but not overpowering.

I adore this recipe because of how flavorful it is. It has always intimidated me to try the more time-consuming Mexican dishes, but this one proved just how easy it is. My go-to dish to prepare when I’m entertaining now is quesabirria and birria tacos, and everyone always asks for the recipe afterward!

What is in a QuesaBirria Taco?

The ingredient list might seem a little lengthy, but I can assure you that your neighborhood grocery store or specialty spice shop has all of them. Here is what you’ll need:

For the Quesabirria Tacos

  • Tortillas– Either store bought corn tortillas or for a low carb option, keto tortillas.
  • Shredded cheese– Although mozzarella works in a pinch, oaxaca cheese is preferred because it is more authentic.
  • Cilantro– served with freshly chopped.
  • CondimentsSalsa, guacamole, and fresh limes. Serve it alongside some consomme for a more traditional dish.

For the Birria Meat

  • Dried ancho chiles– dried-out red poblano chiles. These can be found at specialty grocery stores or in the Mexican food aisle of the supermarket.
  • Mexican chiles– Jalapeno or chipotle peppers can also be used, though New Mexico chiles are preferred.
  • Onion and tomato– sliced into quarters so that they will cook down and become softer.
  • Garlic– Whole cloves.
  • Beef broth– Avoid bouillon cubes and use freshly made broth because a high-quality beef broth makes all the difference.
  • Vegetable oil– To brown the beef.
  • Beef chuck roast– a beef cut that is a little fatter and, after cooking, falls apart and saturates in flavor!). Make 1-inch beef cubes.

  • 12 large corn tortillas
  • 3 cups oaxaca cheese or mozzarella cheese
  • 1/2 cup cilantro finely chopped

  • 4 dried ancho chiles
  • 6 dried new Mexico chiles
  • 1 large onion quartered
  • 4 large tomatoes halved
  • 8 cloves garlic
  • 4 cups beef broth
  • 1 tablespoon vegetable oil
  • 3 lbs chuck beef roast cut into 1-inch cubes
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup apple cider vinegar
  • 1 tablespoon cumin
  • 1 tablespoon coriander dried
  • 2 bay leaves

How to Make Quesabirria Tacos

Simple is an understatement for this recipe. It is a very easy 3-step process and requires little hand-holding.

Step 1- Prepare the Broth

Start by adding the chiles, onion, tomato, garlic, and beef broth into a large pot and placing it over medium heat. After bringing it to a boil, turn the heat down low and allow it to simmer for 15 minutes. While the broth mixture is simmering, prepare the beef. Once the oil in a Dutch oven is hot, add the beef and sear it until it is no longer pink on all sides.

Step 2- Cook the Beef

Next, remove the liquid mixture from the heat. Then add it to the Dutch oven after blending everything with a stick blender until it is smooth. Add the salt, pepper, apple cider vinegar, coriander, and bay leaves and bring everything to a simmer. After it has reached a simmering point, turn off the heat, place it in the oven, and cook it there for three hours.

Step 3- Assemble the Tacos

After the birria beef has finished cooking in the oven, take it out and shred it with two forks before assembling the quesabirria tacos. On a flat surface, arrange the tortillas and generously stuff one side with the birria meat. Fold in half after adding the cheese that has been shred and some cilantro. Over medium heat, place a sizable nonstick pan. Once hot, add the folded tortillas to the pan and cook for a minute each side, or until golden and sizzling.

Serve the quesabirria tacos immediately with salsa, guacamole, and fresh limes.
